The Way of the Turtle - The Slow and Steady Path to Better Health

TVP "Oatmeal"

Need to cut carbs, but miss hot cereal? This is one of my favorite breakfast cereals. My favorite way to make it is in a slow cooker ("crock-pot"), but you can do it on the stove or even in the oven. It keeps in the fridge for up to a week, and freezes well.

Put in crockpot, saucepan, or *large* casserole dish (be careful about this - when I tested it in the oven, it overflowed):

1 quart unsweetened soy milk (can use coconut milk or any other milk)
2 C TVP

Spices/flavorings to taste. I like:
1T cinnamon
1 t nutmeg
1.5 T vanilla
Sweetener to taste

You can also whisk in eggs if you want. If you use 4 eggs or more, it makes it more like rice pudding.

Assuming unsweetened soy milk and liquid sweeteners (zero carbs), the entire recipe has about 36 ECC and makes about 6-10 bowls of "oatmeal", depending upon the size.
