"Oatmeal"
Need to cut carbs,
but miss hot cereal? This is one of my favorite breakfast cereals.
My favorite way to make it is in a slow cooker ("crock-pot"),
but you can do it on the stove or even in the oven. It keeps in
the fridge for up to a week, and freezes well.
Put in crockpot,
saucepan, or *large* casserole dish (be careful about this - when
I tested it in the oven, it overflowed):
1 quart unsweetened
soy milk (can use coconut milk or any other milk)
2 C TVP
Spices/flavorings
to taste. I like:
1T cinnamon
1 t nutmeg
1.5 T vanilla
Sweetener to taste
You can also whisk
in eggs if you want. If you use 4 eggs or more, it makes it more
like rice pudding.
Assuming unsweetened
soy milk and liquid sweeteners (zero carbs), the entire recipe has
about 36 ECC and makes about 6-10 bowls of "oatmeal",
depending upon the size.
