Gluten-Free
Diet
Definition:
A diet without any trace of wheat, rye, barley and most oats, including
foods derived from these foods. Since wheat is pervasive in many
cuisines, this diet can be a challenge. Besides avoiding the obvious
foods such as pasta, bread, and foods made with standard flour,
people on gluten-free diets must look for "hidden" sources
of gluten that may be lurking in such ingredients as modified food
starch, vegetable proteins, and soy sauce.
