Low-Carb
Pizzas Galore!
I don't care about
pasta - low carb substitutes are fine with
me. Bread is long gone. The only time I eat rice is the occasional
sushi. But pizza!! Sometimes I've just gotta have it!
Fortunately, the
really tasty part of pizza is the toppings, (especially if you're
like me and can't eat wheat anyway). So what we need is another
vehicle for those toppings. Here are some suggestions and recipes:
1)
Small pizzas using portobello mushrooms as the "crust".
Take out the stem, and some people like to scoop the gills
out because they tend to blacken - but they taste fine. I like to
bake them for a few minutes on their own before adding the toppings.
Hint: It's easier to find marinara or spaghetti sauce with no sugar
added than pizza sauce, and it generally costs less.
2)
Using low-carb tortillas for "crust" - I haven't
tried this, as the tortillas have wheat, but I hear they are a nice
quick alternative.
3)
"Meatza" - Using ground meat as the base. There
are different versions - I've
linked to this one by Karen Barnaby. Obviously, you can
use whatever sauce and toppings you want.
4)
Pizza Casseroles - In a casserole dish, either start
with browned ground meat on the bottom (I like adding onions and/or
garlic at this stage plus oregano) and top with marinara, cheese,
and pizza toppings, or start with a double layer of zuchinni slices
and do the same thing. Bake at 400 until the toppings are the way
you want them - 10-15 minutes, usually.
5)
Egg-Based
Crust #1 - Don't scoff, this one is my favorite,
and it does not taste eggy! - It has the merit of being able to
pick a piece up and eat it for breakfast the next day. I'm fascinated
by what various combinations of egg and cream cheese or other cheeses
will cook up to, and this is a great example. Link is to Protein

6)
A variation of the above, but with pork rinds. Haven't tried
it because the idea of pork rinds makes me queasy for some reason.

7)
Deep
Dish Version - sort of (but not totally) like a quiche.

8)
Pizza
Soup! - Haven't tried it, but had to include it. Again from
my friends at the PPRB.
